These organic semi-sweet chocolate chips will really step your baked goods up a level. Cold-smoked over alder wood for over 10 hours—the process is pretty laborious and involves moving the chocolate chips every 30 minutes or so to ensure an even smoke. Inspired by the smoky flavours of West Coast Smoked Salmon these chips are great melted down in hot cocoa, or used in a ganache or sandwiched between graham crackers for a delightful smore. Can also be used in savoury applications like a mole sauce or ground up for a pork rub.
